Juicy Burgers Without Guesswork

A straightforward beef burger method with reliable seasoning and a safe finish.

Makes: 4 burgers
Prep: 15 minutes
Cook: roughly 8–15 minutes, depending on thickness and heat; thermometer decides

Ingredients

  • 1 lb ground beef, ideally with enough fat for your preferred texture
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 4 buns
  • Optional: cheese, tomato, lettuce, sliced onion, mustard

Method

  1. Divide the beef into four equal portions. Shape gently into patties a little wider than the buns. Make a shallow dimple in each center so they cook more evenly. Do not knead the beef like dough.
  2. Season the outside just before cooking. Preheat a pan or grill. Keep a cooler grill area available if your patties are thick.
  3. Cook without pressing them flat. Flip when the first side has browned and releases. Pressing squeezes liquid into the heat instead of keeping it in the burger.
  4. Check the center from the side with a thermometer. Ground beef must reach 160°F, per FoodSafety.gov. Add cheese near the end if using.
  5. Rest briefly while you toast the buns. Assemble with vegetables and condiments on a clean work surface.

If your burger turns out dry

Try a thicker patty, gentler shaping, and a cooler finishing zone rather than reducing the safety temperature. If it is pale, the pan or grill may not have been hot enough at the start. If it is dark outside before reaching 160°F (see the thermometer guide), move it to lower heat.
Keep raw beef chilled until cooking and wash surfaces and utensils after contact with raw meat. The four food-safety steps are a useful cookout checklist.
